We got tired of labels we couldn't understand.

Sodium benzoate. Xanthan gum. E102. Modified corn starch. So we asked: why?

The answer was freeze-drying. Remove the moisture and there is nothing for microbes to grow in. No preservatives needed. No additives. No stabilisers. Just the ingredient itself, dried at low heat to preserve all its flavour and nutrition.

We started with six ingredients: chilli, garlic, mustard oil, ginger, lemon juice, rock salt. Every ingredient named. Every one you can pronounce. That's still the entire list today.
